This past weekend was Jons birthday, which in our house means chocolate cake! I didn’t want to make a whole cake since it would just be us eating it (way too dangerous), so I decided to make these adorable little bundt cakes. Whatever we didn’t eat I could freeze for another time.
For this recipe, I used butter and confectioners’ sugar in the pan instead of the normal butter and flour. I forget where I learned this trick, but it works nicely for cakes and other sweet desserts. Also, instead of using water in the cake, I decided to use coffee. Chocolate and coffee are a great combo and one of Jon’s favorites.These little cakes turned out perfect and were hubby approved.
Chocolate Coffee Bundt Cake Modified from All Recipes Extreme Chocolate Cake1 cup raw sugar
3/4 cup and 2 tablespoons all-purpose flour
1/4 cup and 2 tablespoons unsweetened cocoa powder
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
1 egg
1/2 cup almond milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup strong coffee, boiling hot
Preheat oven to 350 degrees, butter and sugar bundt pans.
In a medium bowl, stir together the sugar, flour, cocoa, baking soda, baking powder and salt. Add the egg, milk, oil and vanilla, mix for 3 minutes with an electric mixer. Stir in the hot coffee by hand. Pour evenly into the prepared bundt pans.
Bake for 15 to 20 minutes in the preheated oven, until a toothpick inserted comes out clean. Cool for 10 minutes before removing from pans to cool completely.
Chocolate Frosting
1/4 cup and 2 tablespoons butter
3/4 cup unsweetened cocoa powder 1/2 teaspoon vanilla extract
2-2/3 cups confectioners’ sugar
1/3 cup almond milk
Melt butter, stir in the cocoa and vanilla, then stir in the confectioners’ sugar alternately with the milk. I made mine a little thinner because I dipped the bundt cakes in it then set them on a cooling rack to dry.
This recipe makes five, three inch bundt cakes.
